Fall is here: pumpkin spice creamer

It’s fall you all!

A lot of us chomp at the bit until the first day of fall when the coffee shops start selling PSL (pumpkin spice latte) right?!

Well for all of my fellow clean eaters, my veggie friends and for those of us with milk related allergies I just had to do something to bring us the closest thing home so we can enjoy every day! I will say that usually I don’t take time to do this kind of thing often, but I had tried many other at home versions and I was left with the last half of my coffee cup being a gooey pumpkin puree…it was not pleasant! So there are a few key things that are really important here; first you have to buy the CANNED coconut milk–this is not optional as it has to be thick and creamy to suspend the spice and pumpkin puree, second you need to go to your health food store or go online to www.ilovedatelady.com and order some Caramel Date Sauce. This sauce is the boss you guys…you cannot live without it, and I knew that it might be the key to get all of this amazingness to blow our socks off and I was right. Lastly–if you put clove in this I’m going to shake my head at you because I don’t do clove.

So here we go:

Pumpkin Spice Non-dairy Creamer

1 Can Coconut Milk

2 Tlbs Organic Pumpkin Puree

4 Tlbs Caramel Date Sauce

1/2 tsp Cinnamon

1/4 tsp Nutmeg

1/4 tsp Ground Ginger

1/2 tsp Vanilla Extract

Blend in a blender until smooth and creamy and all lumps from coconut milk are gone. You can store in a mason jar or glass pitcher up to 1 week! Enjoy!
